Yoshida Hamano

Yoshida Hamano
Tucked away in rural Saga on the island of Kyushu, Yoshida Hamono is a family-run forge whose roots go back to sword making. Like many country blacksmiths, the Yoshida family spent generations forging the sickles, hoes and everyday tools that kept the local community working, before turning their hand to the kitchen. Founder Seiji Yoshida learned his craft under some of the most respected smiths of his era, and that pedigree still shows in every blade that leaves the workshop today.

Where Yoshida really stands apart is steel. The family are masters of ZDP-189, a notoriously hard, ultra-fine powdered steel that very few smiths dare to forge by hand. They laminate their own steel and give their blades a sub-zero heat treatment, which produces knives that come scary sharp out of the box and hold that edge for an incredibly long time. Whether it’s a rustic kurouchi Aogami workhorse or a sleek ZDP-189 bunka, a Yoshida knife is built for cooks who want serious performance without the fuss. No gimmicks, just generations of know-how in your hand.
