The principles

What "sharp" actually is, how an edge dulls, and why most home sharpening makes things worse before better.

Theory & stones

Grit, progression, and how a Shapton Kuromaku really works, so you know which stone to reach for and when.

Angle mastery, hands on

The heart of the class. You'll drill a steady angle on your practice knife until it starts to feel like muscle memory.// target ≈ 15° per side

Finishing

Deburring, stropping and testing a finished edge, the steps most people skip, and the ones that make it sing.

You leave sharp

James Higgs

Award-winning chef, and the person running every session. James has spent years on professional pass lines where a sharp knife isn't a luxury, it's the job.

He's genuinely good at teaching it, too: plain language, no jargon, no pressure. Just a small group, a stack of stones, and a chef who wants you to leave able to do this on your own.

What do I need to bring?

Just a can-do attitude. We supply your practice knife and all the sharpening stones. You're welcome to bring one of your own knives to finish on if you'd like.

What's the difference between the two packages?

The class is identical. The higher package simply adds two Shapton Kuromaku whetstones to take home, so you can keep practising the moment you leave.

Can I reschedule?

Yes, free reschedule with at least 48 hours' notice. Reply to your confirmation email and we'll move you to another session.

Is it a good gift?

It's a great one. Book any seat and forward the confirmation, or ask us about a gift note. The take-home whetstone package makes a particularly good present.
