The Gyuto is the do-it-all, general purpose chef's knife. If you are looking for an all-rounder that can handle daily veg and protein prep and portioning, this is the one! A 210mm edge length is the most common, but try a 240mm if you prefer larger knives.

Japanese SKD steel is a high-carbon, semi stainless steel much like Aogami 2 in it’s performance and sharpening feel. It can take an extremely fine edge, has excellent edge retention and is a joy to use when crafted by experienced craftsman. It will still patina lightly over time like other semi-stainless steels, without the added corrosion risk.

Love the extra height - fantastic knife!

I wanted a Yoshikane SKD 240mm gyuto with extra height and this was exactly what I was looking/hoping for. One of my favorite knives to use in the kitchen. Worth nothing this is quite a large knife (unlike a Sakai knife, the measured edge of this is a true 240mm, and possibly a few mm larger), so it might take a bit of getting used to but once you do it's wonderful – just make sure your counter spacing/cutting board is big enough, if not then go for the 210mm. Also, the carbon fibre handle (which is really flecks of carbon fibre encased in resin) is super cool and easy to clean and care for. It was definitely a splurge but worth it! Love the Nashiji finish.
