The Gyuto is the do-it-all, general purpose chef's knife. If you are looking for an all-rounder that can handle daily veg and protein prep and portioning, this is the one! A 210mm edge length is the most common, but try a 240mm if you prefer larger knives.

Sakai Kikumori was founded in 1926 by Kawamura Hamono as a wholesaler, and they work with some of the best blacksmiths in Japan. Solid attention to detail

The knife came well packaged and clean, neat and taken care of. The blade edge is sharp but not too over thin at the edge. Balance feels fine to my hand and the blade length is on the shorter side of 240mm, compared to a few other hand made knives I own in this style, I actually think it is a great length in fact. Cuts well, for now, I have only used it briefly so far and so am not sure about how much sustained work in a period of days it will do. But as I said it feels great cuts well and seems the fit and finish are also great. I use this knife mostly in meat and fish cutting.
