This is my very first kiritsuke & I must say its a very versatile knife with an amazing edge retention from the Ginsan steel. Takes care of most of my prep work in a professional kitchen all the way from cutting fresh produce to slicing proteins. Would definitely recommend for some looking for an alternative to a gyuto & also getting into a semi-carbon steels!
I fell in love with this knife right away. From the beautiful handle to the finish of the blade and the beautiful packaging, great care was taken in it'screation. Thanks to the hap40 steel core, I have not needed to resharpen it yet. The core has started to patina with regular use but this is only enhancing the visual beauty even more in my eyes. The edge geometry is more workhorse than laser.
I recently picked up a habitat magnetic knife holder and installed it on my glass splash back in the kitchen. I used the 3M strips that came in the box. One was enough to hold it without a problem.
The holder easily and securely holds my 6 knives with it’s strong magnet, making my knives easily available without the tedious task of rummaging through the kitchen drawers.

This knife absolutely slays processing veggies. It's light, comfortable, easy to handle and while the grind is impressively thin and sharp its still robust enough to stand up to things like pumpkin and sweet potato. Ginsan being stainless also means you don't need to be paranoid about rust or stains while trying to get through a mountain of tomatoes or onions. It's quickly become one of the most used knives in my kit.
