Yoshikawa Cook-Pal Ren Nitrided Carbon Steel Induction Wok — 36cm (with Helper Handle)
Nitriding is a heat treatment that drives nitrogen into the surface of the steel, and it changes how a carbon steel pan behaves. The face comes out considerably harder and far more resistant to rust than untreated steel, which means the wok is more forgiving of the mistakes that ruin ordinary carbon steel — a wet night in the sink, a tomato sauce left sitting, a season that never quite took. It also gives seasoning something better to grip, so the patina builds faster and holds on longer.
Made by Yoshikawa in Tsubame-Sanjo, the metalworking region that has been turning out this sort of thing for a few hundred years.
36cm is the largest in the range and it's a serious pan. The extra diameter buys you surface area, which is the whole game in wok cooking — more room means the food sears instead of stewing in its own liquid. Worth it if you're regularly cooking for six or more, or if you've been frustrated by batches that steam when they should sizzle.
At 1.63kg full and loaded it's heavy, which is exactly why the helper handle earns its place. The long timber handle detaches and gives you leverage for tossing, and the fixed steel handle opposite lets you lift it properly with two hands. Pouring spouts on both sides for getting stock or oil out cleanly.
The base is flat, so it sits stable and works on induction as well as gas and everything else. Worth checking your burner though — a 36cm pan wants a decent heat source under it to get the base up to temperature.

Seasoning and Care
Give it a quick season before first use to start the patina. The nitrided surface makes this noticeably easier than bare iron, but it still needs doing.
Hand wash only. Dry it properly after every use.
