The Gyuto is the do-it-all, general purpose chef's knife. If you are looking for an all-rounder that can handle daily veg and protein prep and portioning, this is the one! A 210mm edge length is the most common, but try a 240mm if you prefer larger knives.

A truly gorgeous knife. But …

I really wanted the HAP40 210mm gyuto but it’s not in stock for months - so I let myself be seduced into buying this lovely knife for rather a lot more. And it is beautiful, with an ingenious Damascus finish that lets the SG2 steel shine through the black nickel coat with a gleaming mirror finish. It’s light in weight with a slightly thinner blade than some gyutos (perfect for me) and well-balanced - plus it’s mighty sharp, as you’d expect from SG2.

My only small complaint is that the Damascus finish has a slightly rough matt feel to it so the bulk of the blade tends to ‘drag’ through some foodstuffs. It’s just not as satisfying to cut with as a bare steel blade. This is my opinion only - and there’s no way I’m sending it back even though it cost me well over £250. It’s an exquisitely-made knife of real beauty that I find myself looking at repeatedly - but using only occasionally!
