Alalunga Hake in Green Sauce
European hake cooked in salsa verde, the classic green seafood sauce built from parsley, onion and garlic. Alalunga takes this regional staple and prepares the hake right in it, which is exactly what you want with flakey white fish. Parsley, garlic, olive oil and a bit of salt give the whole tin a rich, vibrant flavour. Serve it with toasted bread and sliced tomatoes, or bring in some roast potatoes and turn it into a proper meal.
Wine pairing: A crisp Albariño from Galicia is a natural fit with the herby, garlicky sauce. Or go for an unoaked Australian Chardonnay if you want something a little rounder.
