About This Product
Albacore with Onion and Green Pepper
Albacore loins cooked low and slow with sweet onion and green pepper, then packed in oil so all that homey flavour stays put. This is the kind of thing a good Galician grandmother would put in front of you: comforting, honest, and the sort of satisfying that makes you go quiet for a second. Warm it gently and spoon it over steamed rice, or pile it into a toasted roll.
Wine pairing: A Spanish Garnacha Blanca is lovely with that sweet and savoury mix. Or reach for an Australian Chardonnay with a bit of texture and not too much oak.
Alalunga, Basque Craft in Every Tin
Over in the Basque Country, tinning fish is treated like an actual craft, and Alalunga is one of the most respected conservas houses doing it. Everything's prepared by hand in small batches with sustainably caught fish, using methods passed down over generations. Founded by chef Xabier Urtasun, the whole operation runs on a cook's instinct: precise, generous, and full of flavour without ever going over the top.
