Introducing

Yoshimi Kato

Yoshimi Kato is one of the most well known Blacksmiths in the Echizen Fukui region. He works with other well known blacksmiths in the Takefu knife village and took over his father's company in 2017.

Blade Type

The Gyuto is the general purpose chef knife to suit many tasks, including cutting larger meats and vegetables. It is the most commonly found knife type in many professional kitchens around the world.

Steel Type

SG “Powder Stainless Steel” contains more carbon that traditional carbon steel knives (Aogami, Shirogami) but is also high in stainless elements. This means your knife will hold an extremely sharp edge for a very long time, whilst requiring basically no maintenance in order to stay rust-free. This steel is extremely hard. The harder the steel, the more brittle it can be.

Recommended Maintenance

· Store your knife in a dry environment away from leather pouches or any sources of moisture.

· To maintain your Japanese knives’ sharp edge use a
whetstone. Stones are available on our website.

Terrific lightweight all rounder

This knife has made a great addition to my kitchen. The knife is very lightweight and balanced. The length is perfect to use as a general-purpose kitchen knife. The finish on the blade makes for an eye-catching piece that goes well with my other Ches Edge purchases.

Top quality knife

Feels great in the hand, looks great. Amazing performance for slicing. Food doesn't cling to the blade.
Perhaps this is naive, but it would be good to have a knife in this PM steel made in European dimensions.
I highly recommend this knife, but it hasn't yet replaced my workhorse European kitchen knife.
