Tadafusa

Tadafusa manufacture their knives in the city of Sanjo, well known across Japan as the ‘town of blacksmiths’. The likes of Yoshikane, Hinoura, and Kawamura all hail from the same city. Tadafusa was founded in 1948 by Sone Torasaburo, who began making sickles, knives, and other bladed tools using traditional forging methods, but then began to specialise in kitchen knives, which has culminated in the immaculate pieces you see here.

Blade Type

This bundle takes care of almost all cutting tasks, Petty for small jobs, Santoku for small-medium prep! The only addition to this 2 piece set later down the road would be the Gyuto and Bread knife, found in the ultimate bundle.

Steel Type

SLD is a semi-stainless tool steel with excellent toughness and edge retention. It is similar to SKD, but without some of the edge fragility at thinner grinds.

This is my very first kiritsuke & I must say its a very versatile knife with an amazing edge retention from the Ginsan steel. Takes care of most of my prep work in a professional kitchen all the way from cutting fresh produce to slicing proteins. Would definitely recommend for some looking for an alternative to a gyuto & also getting into a semi-carbon steels!

Beautiful and functional

I fell in love with this knife right away. From the beautiful handle to the finish of the blade and the beautiful packaging, great care was taken in it'screation. Thanks to the hap40 steel core, I have not needed to resharpen it yet. The core has started to patina with regular use but this is only enhancing the visual beauty even more in my eyes. The edge geometry is more workhorse than laser.

Elegant and strong

I recently picked up a habitat magnetic knife holder and installed it on my glass splash back in the kitchen. I used the 3M strips that came in the box. One was enough to hold it without a problem.
The holder easily and securely holds my 6 knives with it’s strong magnet, making my knives easily available without the tedious task of rummaging through the kitchen drawers.
The walnut finish look great and compliments my knives well
