Introducing

Shiro Kamo

Shiro Kamo is the working President of the Takefu Knife Village Cooperative, he was awarded the ‘Master of Traditional Crafts’ at the young age of 45. His knives feature consistently even and thin grinds, clean blade finishes and fantastic attention to detail, not to mention the cutting performance to match.

Blade Type

The Petty is a smaller utility knife, often ranging from 120-150mm. It is for fine dicing, mincing, and off-board work.

Steel Type

White Steel is the purest of the Japanese high -carbon steels made by Hitachi Metals. It can be forged to extremely high hardness, sharpened extremely easily (even for novices), and takes a scalpel like edge with ease. Being this pure and lacking any stainless properties, this steel is very reactive and will rust quickly if not dried after use, and oiled between uses.

Recommended Maintenance

· Store your knife in a dry environment away from leather pouches or any sources of moisture.

· To maintain your Japanese knives’ sharp edge use a
whetstone. Stones are available on our website.

So light - so amazing!!

Wow!! This is a wonderful blade. I was taken back a step on first holding it because of it lightness in hand. A combination thin blade and light weight handle materials I suspect. And the balance is truly outstanding!
This is a superbly made petty knife that I just can’t fault. I want another one just so I have two…but that would be kinda silly!!
So it’s onto the next Shiro Kamo Shirogam.
Many thanks to chefs-edge for their commitment in gathering some of the worlds best knives and allowing us all to own them.
Thank you 😊
