Shiro Kamo

Shiro Kamo is the working President of the Takefu Knife Village Cooperative, he was awarded the ‘Master of Traditional Crafts’ at the young age of 45. His knives feature consistently even and thin grinds, clean blade finishes and fantastic attention to detail, not to mention the cutting performance to match.

Blade Type

The Bunka is the new-age variant of the Santoku. It is a great general purpose knife with an angled “K-Tip” allowed more precise tip-work and a handy tool for scraping ingredients across the board without blunting your knife edge.

Steel Type

White Steel is the purest of the Japanese high -carbon steels made by Hitachi Metals. It can be forged to extremely high hardness, sharpened extremely easily (even for novices), and takes a scalpel like edge with ease. Being this pure and lacking any stainless properties, this steel is very reactive and will rust quickly if not dried after use, and oiled between uses.

Recommended Maintenance

Great knife

I bought this on the strength of having the 210mm Gyuto of the same model and it performs and sharpens just like that. I holds a great edge as well, thin and light.
It has a reactive cladding but after some protein slicing all will be fine and it will take a protective patina.
