The Gyuto is the do-it-all, general purpose chef's knife. If you are looking for an all-rounder that can handle daily veg and protein prep and portioning, this is the one! A 210mm edge length is the most common, but try a 240mm if you prefer larger knives.

Nigara Hamono of Aomori are truly some of the most experienced knifemakers in Japan. Headed by Go-Yoshizawa San whom we met personally in 2023 (what a legend), they are now on their 8th generation of blacksmiths, they are masters at stainless Damascus forging and heat treatment. They supply knives of impeccable finish with some of the best performing knives we've come across. They can also do it all, from forging Honyaki, experimenting with new steels and wild finishes, to creating flawless daily workhorse knives that don't break the bank.

Great knife super sharp

This knife is a dream in the kitchen. Had it for a few days and it cut everything like butter. I’ve never had a knife other than my Shun Classics, what a upgrade I will be adding more hand forged to my collection!
