Introducing

Tsunehisa

Tsunehisa is a collaborative brand of makers from Sakai, Tosa, and other famous knifemaking regions of Japan. These knives draw on the expertise of each region in relation to their particular steel types. For example, Tosa is known for their spectacular Ginsan, Sakai for their carbon steels. The Tsunehisa brand represents exceptional value for money with fantastic fit and finish paired with the best knifemaking steels Japan has to offer.

Blade Type

The Nakiri is a knife primarily for cutting vegetables and herbs. Its flat blade profile allows maximum contact with the cutting board while push cutting, perfect for veg. This is not recommended as a general purpose knife.

Steel Type

Blue Steel is a traditional, high-carbon steel made by Hitachi Metals in Japan. It is the favourite steel of many knife makers and chefs across the world for it’s fantastic edge holding ability, toughness, and ease of sharpening. It contains few stainless elements, and as such will develop a patina, and may develop rust spots if left wet after use.

Excellent Value! Don't wait, just buy one!

The Tsunehisa Blue Super is simply outstanding value for its performance & fit and finish. Well weighted, fit and finish was top notch and the grind was decent. After a bit of thinning on a Shapton 1000 then progressions to Karasu 9000, the knife is screaming sharp, easily shaving arms and blows through soft vegetables and citrus fruits like they weren't there. Surprisingly rust resistant too, with the missus rinsing it then leaving it to drip dry on the dish rack - no rust, just a bit of discolor which was easily dealt with. Now if they had a Deba in the same steel... :-)
