Knife Information

A relatively young but masterful blacksmith, Shigeki Tanaka crafts his knives in a workshop in Miki City, Japan. Known for being skilful and creative, he works with almost all knifemaking steels, from high carbon like Aogami, to powder stainless steel. His range of R2/SG2 Black Damascus had our jaws on the floor when we received our first shipment from him!

The first thing we noted was the impeccable presentation. A Palownia wooden box houses all his R2 knives and is lined with red velvet. The etching of these blades has left a dark, misty, striking Damascus pattern, and are dressed in Walnut handles. Beautifully thin grinds ensure fantastic cutting performance, and 64HRC guarantees phenomenal edge retention

Best paired with a 22cm felt lined blade guard and a 1000/6000 whetstone

Blade Type

The Gyuto is the general purpose chef knife to suit many tasks, including cutting larger meats and vegetables. It is the most commonly found knife type in many professional kitchens around the world.

Steel Type

SG “Powder Stainless Steel” contains more carbon that traditional carbon steel knives (Aogami, Shirogami) but is also high in stainless elements. This means your knife will hold an extremely sharp edge for a very long time, whilst requiring basically no maintenance in order to stay rust-free. This steel is extremely hard. The harder the steel, the more brittle it can be.

Recommended Maintenance

· Store your knife in a dry environment away from leather pouches or any sources of moisture.
