Sakai Kanechika

Sakai Kanechika is based out of Sakai City, Osaka Prefecture. Mr. Fujii san specializes in the sharpening of his knives and has been in the knife business for more than 50 years.

Blade Type

Double Bevel Deba are used mainly as a cleaver or fish filleting knife. The Single Bevel Deba allows you to get closer to the spine, whereas the Double Bevel is for more heavy duty work.

Steel Type

White Steel is the purest of the Japanese high -carbon steels made by Hitachi Metals. It can be forged to extremely high hardness, sharpened extremely easily (even for novices), and takes a scalpel like edge with ease. Being this pure and lacking any stainless properties, this steel is very reactive and will rust quickly if not dried after use, and oiled between uses.
