James Oatley's knives need no introduction. Heavily influenced by Japanese design and culture, his pieces are crafted in Australia and are highly unique, sought after, and crafted to the highest quality.

Some words from James himself: "On my 30th birthday my wife gifted me a Saji Damascus Gyuto, I was blown away with the craftsmanship of this knife, so intrigued on how it was made, This led me to attend the Sydney knife show in 2014. It was then that I saw what other makes were producing in Australia. That was it for me and I have been hard at it ever since. With the help and inspiration from many of this country’s great smiths.

I now have the pleasure of working with a tool that I have made with my hands and imagination from raw materials, a work of art that has sole.

This takes my cooking/carving/hunting to another level of pleasure and satisfaction amongst my creative process.

Blade Type

The Kiritsuke is the general purpose chef knife to suit many tasks, including cutting larger meats and vegetables. It is the most commonly found knife type in many professional kitchens around the world.

Steel Type

High-carbon steel made by Hitachi Metals in Japan. It has a fantastic edge holding ability, toughness, and ease of sharpening. It contains few stainless elements, and as such will develop a patina, and may develop rust spots if left wet after use.

Recomended Maintenance

· Store your knife in a dry environment away from leather pouches or any sources of moisture.
