Chefs Edge - Handmade Japanese Kitchen Knives

Daisuke Nishida crafts his knives from scratch using traditional warikomi methods in his Kumamoto workshop. His knives are a heavier than usual build, perfect for heavy duty tasks and for those that like a little weight in their knives.

Blade Type

The Santoku is a general purpose kitchen knife, mostly used for cutting smaller meat and vegetables. Sizes for the Santoku range from 130-180mm, with 165mm being the most popular.

Steel Type

White Steel is the purest of the Japanese high -carbon steels made by Hitachi Metals. It can be forged to extremely high hardness, sharpened extremely easily (even for novices), and takes a scalpel like edge with ease. Being this pure and lacking any stainless properties, this steel is very reactive and will rust quickly if not dried after use, and oiled between uses.

Recommended Maintenance
