Introducing

Misuzu

Misuzu knives are crafted in a small, quaint, family run workshop in Miki City, Japan. They are a very unique piece, unlike many others in our store. They have an aggressive, flat belly profile, wide bevel, and a stepped brass bolstered magnolia handle coated in a traditional Japanese Urushi lacquer. Designed primarily for tip work and push cutting, they have excellent cutting performance and a balance point about an inch in front of the heel.

Blade Type

The Bunka is the new-age variant of the Santoku. It is a great general purpose knife with an angled “K-Tip” allowed more precise tip-work and a handy tool for scraping ingredients across the board without blunting your knife edge.

Steel Type

VG10 is perhaps the most common of the stainless steels found in Japanese knives. Made by Takefu Special Steel, it’s quality and all round high performance make it a great choice for a knife with good edge holding, low maintenance, and low fragility. VG10 is slightly softer than it’s high-carbon steel counterparts, and as such can be more robust and hard-wearing.

Recommended Maintenance

· Store your knife in a dry environment away from leather pouches or any sources of moisture.
