Hatsukokoro

Hatsukokoro is a brand comprised of knives from some of the best artisans in Japan. Think Yoshikane, Myojin, Yauji, and many more. The creative force behind the Hatsukokoro brand is clearly doing something right turning out outstanding quality and incredible designs with thick spine tapers, unique tsuchime and damascus patterns, with the use of cutting edge (no pun intended) materials. An instantly popular brand, and with very good reason.

Blade Type

The Petty is a smaller utility knife, often ranging from 120-150mm. It is for fine dicing, mincing, and off-board work.

Steel Type

Ginsan is one of our favourite stainless steels. Made by Hitachi Metals, it is a very fine, pure knifemaking steel. It has edge retention similar to it’s carbon steel counterparts, can be sharpened to a very fine edge with ease, and all the while being completely stainless. It is also robust, hard-wearing, and less prone to chipping than carbon steel. This is a highly under-rated knife steel and one that performs far above it’s price point.

Recommended Maintenance

· Store your knife in a dry environment away from leather pouches or any sources of moisture.
